How to Skin a Squirrel
To skin a squirrel, first, remove the fur from the tail. You should have a flap of skin that is two to three inches wide at the base of the tail. Continue to skin the back, two and a half to three inches from the first vertical cut. Then pinch the skin to lift it up at the breastbone. Once the flap is loose, remove the skin from the back of the squirrel.

For years, Louisiana hunters have used squirrels as their gateway prey because they are easily accessible and abundant. Squirrel meat is flavorful, but the meat has fallen out of favor due to the taste, density and gameyness. Now, thanks to the Squirrel Hunting 101 workshop, hunters can enjoy this tasty delicacy in a more environmentally friendly way.
A seminar for novices will be held at the Louisiana Department of Wildlife and Fisheries (LDWF) Waddill Wildlife Refuge on Sept. 19. Participants are asked to wear face masks and follow social distancing protocols, since there’s a COVID-19 pandemic sweeping the state. The seminar will teach participants how to properly hunt squirrels, and will also discuss the appropriate equipment and techniques.

Squirrels are one of Louisiana’s gateway prey, easy to hunt and delicious. The meat is dense, delicate, and not gamey or overly spicy. Because of the scarcity of squirrels in Louisiana, the use of squirrel meat has declined. But Dufour hopes to change that. He has compiled a list of his favorite recipes for squirrel. And he plans to share them with you!
For the recipes, Dufour uses his pickup’s tailgate as a butcher block. He thaws out the carcasses from the spring squirrel season and wears purple latex gloves. To prepare the meat, he asks biologist Kacie Rome to hold onto the squirrel’s hind legs. Dufour slices the squirrel with the tip of the pocketknife and sets it back on the tailgate. Rome holds on to the squirrel’s haunches as he peels the skin over its head.
